Local Restaurant Serves Chicago Staple For The Inauguration

WASHINGTON (JCHAYWARD.COM) — Wildfire Chef, Eddie Ishaq, joined JC Hayward on Friday to prepare a Classic Giardiniera, the iconic condiment of Chicago, in tribute to Inauguration Day and the hometown of our 44th president.

With a nod to the hometown of both the President and Wildfire, Wildfire at Tysons Galleria, McLean, VA will offer two Chicago-inspired offerings for Inauguration Day weekend:  Presidential Spicy Chopped Chicken Giardiniera and an iconic Chicago Style Italian Beef.  It’s a simple side dish full of nutrients and flavor from one of JC’s favorite chefs.

6 oz Cooked prime rib – thin sliced

1 French roll

1 portion 6 oz. cooked hot prime rib, thin sliced

2 oz. giardiniera (see below)

Au jus from the prime rib

Classic Chicago Giardiniera:

 ¼ cup salt

1 cup carrots, diced

1 cup cauliflower florets, small

4 serrano peppers, sliced

2 cloves garlic, minced

1 stalk celery, diced

1 red pepper, diced

2 cups oil

1 T. oregano

pepper, to taste

Add salt to 2 cups water and mix until the salt has dissolved. Add the next six ingredients and stir into water. Cover and refrigerate overnight.

Drain and rinse the vegetables. In another bowl, mix the oil, oregano and pepper. Add the vegetables and stir. Cover and let it sit and marinate overnight. Transfer to an air-tight jar and refrigerate.

Use as a condiment for Chicago Style Italian Beef or Spicy Chopped Chicken Giardiniera.
